For the last half of the 20th century, apples were pretty much all the same. Red Delicious: that was the name of the variety. And, although it was red, it wasn't all that delicious. In the past several years, though, Northwest apple farmers have embraced a wide variety of apples. Many of the apples are spontaneous breeds with unique flavors and very different textures. Seattle chef, writer and culinary instructor Greg Atkinson talks with Megan Sukys about how the apple bin got so crowded.
