 Better Shrimp Salad

We wanted perfectly cooked shrimp without the extra work of grilling, roasting, or sautéing. And we needed to coat them with the perfect deli-style dressing—something creamy that wouldn't mask the shrimp or drown out the other ingredients. Using a technique practiced in the 1970s by French chef Michel Guérard, we started cooking our shrimp in a cold court-bouillon (typically white wine, lemon juice, herbs, spices, and water; we left out the wine), then heating the shrimp and liquid to just a near simmer. Because we started them in cold liquid and minimized their cooking time, the shrimp absorbed the poaching flavors and stayed firm and tender. In the dressing, we kept the traditional mayonnaise, but reduced the amount to just 1/4 cup. With less mayo, we were able to add variety to the salads with fresh herbs, oranges and even chipotle chiles.

This was the second cartoon I got featured on newgrounds.com back in 2004. At the time, many fans of the first one told me this was too dark and spoilt the innocence of the original, whilst others said that it was a 100% improvement. To explain why I'm uploading these old cartoons despite them already being on here: I have come to accept that Salad Fingers is always going to get uploaded to Youtube by someone so it might as well be me and it might as well be in decent quality. I've seen too many out of sync, bad sound quality, jerky uploads and it ruins it. Even to the guy who said I'm a health fraud since I got a bacterial infection. ;-) Everyone is entitled to an opinion, whether I agree or not! Though I will publicly disagree with him... Last night was tough... I had a massive fever, sweats and didn't get much sleep at all. But today is much better and I'm positive that I won't have those symptoms again. (I have no idea if they were due to the Lyme or the antibiotics!) Annmarie was ready to do today's show on her own in case I didn't feel well, but I feel much better today... so you get both of us! This raw kale salad was contributed in part by one of our faithful watchers, Bernadette! Thanks, Bernadette for being a true superhero with your comments and support!
