Turkey and Spinach Salad Recipe Ingredients: 8 cups fresh spinach 8 ounces cooked turkey, cubed 2 grapefruit peeled and sectioned 2 oranges peeled and sectioned 1/4 cup orange juice 2 tablespoons extra virgin olive oil 1 teaspoon honey 1/2 teaspoon poppy seeds 1/4 teaspoon salt 1/4 teaspoon dry mustard 2 tablespoons sliced almonds Preparation: Place spinach, turkey, grapefruit and oranges into a large bowl. Dressing: Mixing the dressing requires using a screw top jar or other air tight container where you will combine orange juice, extra virgin olive oil, honey, poppy seeds, salt and dry mustard. Cover and shake well. Pour dressing over salad and toss gently. Sprinkle with almonds. Sweet Bean Pilaf Recipe Ingredients: 1/2 cup chopped onions 2 cloves minced garlic 1 tablespoon extra virgin olive oil 1 cup bulgur wheat (Bulgur is a quick-cooking form of whole wheat that has been cleaned, parboiled, dried, ground into particles and sifted into distinct sizes)1 cup frozen green or sweet soybeans 1 cup orange juice 1 cup chicken broth 1 medium carrot cut into bite-size strips 1/2 cup bias-sliced celery (Bias sliced is a cooking term meaning to slice at a 45-degree angle. Often used in oriental recipes to cut vegetables)2 peeled and sectioned oranges 1/3 cup dried cherries or raisins Preparation: In a large saucepan coated with extra virgin olive oil cook onions and garlic until tender. Stir in bulgur, soybeans, orange juice, chicken broth, carrots and celery. Bring to a boil and reduce heat. Cover and simmer until soybeans are tender and liquid has been absorbed 10-12 minutes. Hi all here is day two of healthy recipe s Breakfast Have a poached egg on some wholemeal/grain bread more wheatier the better, with mushrooms, with 1 tsp of low fat spread, grilled mushrooms and a glass of orange juice or pineapple juice. Juice it yourself if you have the means it will taste better. Lunch One toasted bagel filled with low fat cheese soft cheese use cottage cheese if you already eat it, add to this a small portion of smoke salmon, and serve with some salad, and have a small bowl of strawberries Dinner/Tea I piece of chicken breast no skin, this needs to be grilled. One shallot, 1/2 of a red bell pepper, one sliced courgette, three slices of aubergine which will need to be stir fried in one tsp of olive oil with some chopped tomatoes. Serve this with some new potatoes and sprinkle a small amount of Parmesan cheese on top. One scoop of low fat ice cream, with a banana and some no sugar jelly. Lunch Wholemeal pitta bread with Greek tzatziki see here how to make it add some cucumber which is chopped and a grated carrot Tea/Late Dinner Steak with potato wedges 1 barbecued medium steak, with some potato wedges served with some salad and 1tsp of low fat mayonnaise. Mamaliga is an Eastern European dish. It is made by boiling cornmeal with water or broth and leaving it to set as a loaf. It is then cut into thick slices and served with sharp cheese. We love to serve it in the fall with roasted beets tossed with their greens, which are loaded with Vitamin A.
