Escarole Videos

This is an old Italian recipe from my grandmother. My Dad taught me how to make it. Now I'll teach you. This is a super easy soup to make and it's perfect to serve during the fall and winter months. It's especially great to give to a sick friend (I'll be giving some to Wendy tomorrow) Throw some grated parmesan cheese on top of the soup just before you eat it for that extra yummy goodness. What you will need 2 heads of Escarole 2 Eggs 1 Med onion 1/2 Cup cream 1/2 Cup Parmesan Cheese 1/8 Cup of Olive Oil 1 1/2 pound of ground beef Salt & Pepper (to taste) 9 Cans of Chicken Broth (Low Sodium) - I said seven cans in the video, but actually used 9 Enjoy! escarole from Loonachic on Vimeo. my dad is an amazing cook. he makes everything from scratch. while visiting him in vegas, he taught me how to make italian sausage from scratch starting by grinding the meat, seasoning it, and putting it into the casings..it's the most amazing italian sausage i've ever had. his meatballs and gravy are to die for too. anyway... because we live so far away from one another, i thought i would try my hand at cooking some of the old italian recipes that have been passed down through generations. i'm not confident that i'm getting everything right, so i'll use vimeo to communicate with my dad and hopefully tweak the recipes by showing my dad these videos. this is my first attempt at escarole soup. it's a chicken broth based italian soup made with with tiny meatballs and lots of escarole. :-) Cast: Loonachic
