This ongoing series will feature first-person glimpses of life around the world, told through the lenses and voices of Boing Boing editors, guest collaborators -- and through the people in these places, their own stories, their own way. When we can, we want to place the camera directly in the hands -- literally -- of the people whose lives, cultures, and lands we're visiting. We're kicking this off with an episode I shot during a recent visit in a K'iche Maya village in the highlands of Guatemala, where I go a few times a year to work on sustainable development projects with an international project managed with local indigenous leaders. "El Molinero," the title of this debut piece, refers to the corn mill where young girls go every day to grind soaked, hulled corn ("nixtamal") into soft dough for tortillas or tamales (in K'iche, "k'osh"). The old machine -- hacked together by local craftsman from various components -- is extremely loud, spews smelly fuel exhaust, and like many aspects of daily life and work here, is dangerous. The K'iche girls you see in this episode helped me shoot some of what you see. In future episodes, they'll tell their stories themselves, and we'll visit other places -- Tibet, Africa, Mexico, China, India, and Japan, to name a few of the destinations planned. The altercation started when Omarosa Manigault-Stallworth first walked onto the daytime talk show and said she was displeased with Williams' introduction of her and would not be disrespected. Things got uglier when Williams grabbed Omarosa's book cover to hold it up to the camera, and Omarosa snatched it back out of Williams' hand. "Omarosa wished her career was my career," Williams told the AP. "Omarosa is a delusional, D-list, pathetic woman." The yanking gave way to Omarosa attacking Williams' appearance, asking the talk show host whether she had had a nose job and suggesting she shouldn't wear wigs. We wanted perfectly cooked shrimp without the extra work of grilling, roasting, or sautéing. And we needed to coat them with the perfect deli-style dressing—something creamy that wouldn't mask the shrimp or drown out the other ingredients. Using a technique practiced in the 1970s by French chef Michel Guérard, we started cooking our shrimp in a cold court-bouillon (typically white wine, lemon juice, herbs, spices, and water; we left out the wine), then heating the shrimp and liquid to just a near simmer. Because we started them in cold liquid and minimized their cooking time, the shrimp absorbed the poaching flavors and stayed firm and tender. In the dressing, we kept the traditional mayonnaise, but reduced the amount to just 1/4 cup. This red pepper scallop dish is sort of a rarity for me. I usually don't shoot after dark, as the food looks much better when I have a combination of natural and overhead lights. It's also rare for leftovers to star in these video recipes, since I don't bother setting up all the equipment when I'm just throwing something together. But this time, for some reason I had a feeling, and I'm glad the camera was rolling. I had a little bit of mashed potato, half a roasted red pepper (see bonus clip below), and a pound of scallops left over from a ceviche recipe I'm doing for About.com. I do have to admit I'm guessing at the ingredient amounts below. This was fast and fun - no recipes, no measuring - just intuitive cooking. The sad thing about cooking like that is I will never have the exact same dish again. Which is what made it so good. Enjoy.
