This video shows how we make our pralines in 10 steps: The mould is filled with chocolate.The air bubbles disappear with the vibration.The excess of chocolate is taken out.The mould is put in the fridge for 20 minutes.The filling is put into the pocket.The filling could be flavoured ganache, pralin , caramel or anything else...The shells are filled with the ganache, the pralin , the caramel...The mould is put back in the fridge for another 20 minutes.The filled shells are closed with chocolate.Then, the mould is put again in the fridge for 20 minutes.The pralines are removed from the mould. Il va vous faire découvrir une partie de mon univers musical et surtout mon pote, mon frère..... Joel dit Joebasse ! Ce clip a été réalisé dans son studio, à Port de Bouc par son fils Fabian. The products of Round Pond have been some of my favorite finds from the last couple of years. Their artisanal olive oils, red wine vinegars and fruit syrups are made from hand-picked fruits from their own sustainably-farmed estate in the Napa Valley. I ran into them at the farmer's market when I was out in wine country, and became giddy when I discovered the new fruit syrups. Meyer lemon syrup over cheesecake, anyone? I thought so. They now offer estate wines as well, and tours of the olive mill, so if you're on the west coast this would definitely be worth a peek. http://www.roundpond.com/
