En este episodio te vamos a invitar a romper algunos estereotipos, animarte a ir un poco más allá y probar vinos que quizás no te llaman la atención, vinos que podríamos considerar "poco serios", y por lo mismo los evitamos a veces, y es que en esta ocasión hablaremos de los vinos rosados. Lo primero que se debe decir es que no hay que descartar estos vinos por su fama: no son vinos dulces, ni saben a chicle, y son diferentes a como mucha gente piensa, que los ve similares a bebidas como Boones o Caribe Cooler; estos vinos son un gran compañero para la comida, su acidez invita a tomar otro bocado, y al beberlos solos, dicha acidez invita a beber otro trago. Los rosados tienden a ser más parecidos a un vino blanco en carácter y sabores, pero encontramos un toque de características del vino tinto, y eso es lo que los hace muy interesantes. Este tipo de vino, no tan oscuro para ser tinto, pero demasiado colorido como para ser blanco, se elabora justamente con uvas tintas; y lo más importante que hay ue saber de ellos, es que simplemente son muy sabrosos. Así que si tú piensas que sólo los tintos valen la pena, o te has dejado llevar por la fama de los rosados, y nunca los has probado, o te consideras demasiado rudo para beber un vino rosado, es momento de dejar todo eso atrás, y animarte a darles una oportunidad, sobre todo en estos días veraniegos, ya que pueden ser vinos muy refrescantes.

Muchas veces hemos escuchado que los vinos maduran con el tiempo y que por lo tanto es útil y hasta necesario dejarlos envejecer antes de beberlos; sin embargo en realidad esto no es así: no todos los vinos están hechos para eso; de hecho sólo un 5% de la producción mundial tiene la cualidad de enriquecerse después de muchos años. Entonces, ¿cómo saber cuándo abrir nuestras botellas? Esta es una pregunta que recibimos frecuentemente, y que es difícil contestar de una manera general, dadas todas las opciones y estilos de vinos diferentes que hay, pero en este episodio daremos algunos consejos y sugerencias útiles para poder decidir cuándo consumir nuestros vinos. Es muy común que la gente compre vinos sólo cuando considera que vale la pena por ser una ocasión especial, pero no se necesita una cena importante, una reunión, un evento social, o alguna situación por el estilo, para poder disfrutar de un buen vino; cualquier día y cualquier hora pueden ser un momento especial. Por eso es importante comenzar a romper esas costumbres y adquirir diversos vinos en diferentes momentos, para de ese modo ir haciendo una pequeña colección particular, y poder beber uno de nuestros vinos cuando se nos antoje. Ahora bien, la principal recomendación que se puede hacer es no guardar los vinos por el simple hecho de guardarlos; el dejar pasar años sin abrirlos no necesariamente hará que mejoren: los vinos sí evolucionan con el tiempo, pero no indefinidamente, su tiempo de maduración puede variar desde 1 hasta 30 o 50 años. Entonces, hay que identificar qué vinos tenemos, de qué uvas, de qué regiones, y de qué añadas, para determinar si queremos dejarlo en nuestra cava, o abrirlo aún siendo recién comprado.

Luego de salirnos un poco de las regiones vitivinícolas, con temas como el roble y el maridaje, regresamos a nuestro recorrido mundial, y una vez más visitaremos los Estados Unidos. Cuando se habla de vinos provenientes de este país norteamericano, es muy común que la gente sólo piense en la región de California, y tienen razón: la mayor parte de los vinos estadounidenses provienen de dicho estado. Sin embargo, dentro del país hay otras zonas vinícolas que vale la pena conocer; así que hagamos a un lado nuestra imagen de este país, sus ideas políticas y económicas, sus guerras y demás, y vamos a concentrarnos en lo que nos interesa dentro del curso: el vino. Estados Unidos está produciendo unos vinos muy interesantes, fáciles de conseguir, y a buen precio. En este episodio nos enfocaremos en Estados como Washington, Oregon y Nueva York. En Washington (el estado, no la capital del país) se puede cultivar casi cualquier variedad de uva: Cabernet Sauvignon, Merlot, Sirah, Chardonnay, Sauvignon blanc, Riesling, y más; casi la única variedad que no se encuentra es la Pinot Noir, y es que el clima no es tan adecuado para esta uva. Todo lo contrario a lo que sucede en el estado de Oregon, cuya uva casi insignia es la Pinot Noir, pues el clima fresco es ideal para esta uva, lo que resulta en grandes vinos, incluso se dice que los Pinot Noir de Oregon están entre los mejores del mundo. Haciendo a un lado California, Washington y Oregon, en el resto de Estados Unidos sólo se produce cerca de un 3% de los vinos, pero dentro de ese porcentaje, Nueva York elabora grandes vinos, aunque no estén entre las preferencias de los escritores y críticos de vino.
